On Sunday evenings as a child, do you remember the lovely smell of delicious slowly roasted chicken? This was a Sunday dinner special food item and you would eagerly wait for it. Even today you remember the inviting, comforting food smell and how you waited for this delicious food to be served at your dinner plate. Most people think cooking a slowly roasted chicken takes a large amount of time and patience. But you know that you can create a good impressive meal in a matter of a few hours.
How do you cook a slowly roasted chicken?

The ingredients are very simple and basic when you roast a chicken. These are:
Whole chicken – 1, cleaned and prepared for slow roasting
Paprika – 1 teaspoon
Black pepper finely ground – 1 teaspoon
Garlic salt – 1 teaspoon
Parsley, dried – 1 teaspoon
Marjoram, dried – 1 teaspoon
Good quality red wine – 1 cup
Celery, cut into halves – 4 stalks
Onion – 1, quartered.

Cooking method to create the slowly roasted chicken:
The oven is preheated at 120 degrees C to cook the slowly roasted chicken.
In a small clean bowl, add the black pepper, paprika powder, garlic salt, finely chopped parsley and marjoram. Mix all the ingredients well.

In a shallow roasting saucepan, add the cup of red wine and set it aside.
Take the chicken which would be slowly roasted and add inside the chicken’s cavity the onion quarters and the celery stalks.

Carefully use the spice mixture and rub it into the chicken skin.
Now place the chicken in the pan where it would be roasted.
Cover the chicken in the roasting pan and bake it for a few hours.
Your delicious slowly roasted chicken would take about five to six hours to cook. It would cook in its own juices, which would give a delicious flavor to it.

Place a thermometer between the thighs of the chicken, so that you can monitor your chicken being cooked at the right temperature.

Check if the chicken has been completely roasted, if not allow it to be slowly cooked for a few minutes more.
Once your slowly cooked chicken is done, cover it with an aluminum foil to keep the chicken warm.
Before serving to your family, you can accompany your slowly cooked chicken with golden fried potatoes flavored with butter and pepper.

Simple rules to remember while cooking a slowly roasted chicken:
When you cook your chicken, monitor the temperature in the oven and your roasted chicken should not be undercooked or overcooked.

You know your slowly roasted chicken is prepared, when you insert a spoon to check and the chicken juices come out.

When you cook a slowly roasted chicken, keep on basting the chicken at regular intervals. This would keep the skin of the roasted chicken moist and prevent it from drying out.
Truss the chicken legs and wings properly.
